Chocolate Cake (Dairy & Egg Free)

My youngest son is lactose intollerant and as a result he can't have a bunch of pre made cakes and other foods.

This makes it really hard when you have to explain to your 3 year old no you can't have chocolate cake because you will end up with a stomach ache. So I have had to find things for him to eat so he doesn't feel left out. This is one of my recipes.

Chocolate Cake

1 1/2 Cup of SR Flour
1 Cup of Sugar (white)
3 Tablespoons of Cocoa (make sure there is no dairy in the cocoa)
1 Cup Water
1/3 cup of oil (canola or corn)
1 Teaspoon Vanilla
1 Tablespoon of white vinegar.

Combine all ingredients in a bowl and mix well. Pour into greased and floured 8 inch cake pan and bake at 356 F (180 C) for 30 minutes or until a skewer comes out cleanly when stuck into the middle of the cake.

Alternatively you can use a muffin tin instead. Adjust cooking time to about 18 minutes again use the skewer test to see if it is cooked.
